Ask me about Wedding cakes, Birthday cakes or any cakes and I get nervous! Ditto cake decorating. Since the last of our four children moved out, I rarely cook. Sure, I make my specialties for holidays and dinner parties but baking cakes always scares me. It seems to me that if you're using fresh ingredients in a mostly classical way, catering a dinner can't be a total disaster. Not so with cake baking! Baking takes something else, perhaps an innate talent, confidence or bravissimo! One tiny mistake and POOF, a total disaster.
